| 2 strips |
Bacon |
| 2 cups |
Bread crumbs |
| 2-3 ts. |
Apple sauce |
| dash |
Poultry seasoning |
| dash |
Sage seasoning |
| 1/4 cup |
Onion (optional) |
| 1/4 cup |
Celery |
| 1/4 cup |
Carrots (shredded) |
| Preheat oven to 350. Pluck and remove inards from the 2 ptarmigans. Chop the gizzard, heart, and bacon strips and fry in oil. In a bowl mix the fried inards with the bread crumbs, apple sauce, poultry seasoning, sage, onion, celery, and carrots. Spoon stuffing in ptarmigan and bake covered in a roasting pan until the little drumsticks are loose.
